Meal Plan Monday

The end of last week I lost my motivation.  It was hard to get excited about being in the kitchen.  When the Hubs works his 4 day shifts that is usually what happens.  I'm glad my kids love my cooking (most of the time), but it is always so much more satisfying to make a delicious meal for the Hubs who is always full of compliments.  Compliments make me happy, but who can honestly disagree with that.  This week however, the Hubs will be home more, and we have a big day to celebrate...  Thursday is our anniversary!  We've been married for 10 years, together for 11, and best friends for 13.  Every day I still wonder how I got so lucky to have a wonderful, hardworking, man in my life.  So, Friday night rather than celebrating out, we are sending the kids to spend the night with their wonderful Auntie, and we're cooking some of our favorites together! 


Monday:
Carne Asada Tacos on fresh tortillas
Spicy Black Beans

Tuesday:
Peanut Tamarind Sweet Potato Curry (a family favorite)
Brown Rice
Veggies

Wednesday:
Key-Style Citrus Chicken
Cous Cous, or Quinoa
Garden Salad
Jell-o (the girls have been begging me to let them make a jell-o.)

Thursday:
Leftover Night

Friday: The Anniversary Dinner
Ravioli with Gorgonzola Cream Sauce
Caesar Salad
Artisan Bread
Chocolate Souffle (we only do this once a year, but I think it needs to happen more often).

Saturday:
Korean Beef
Brown Rice
Stir Fried Veggies

Sunday:
Balsamic Cherry Pork Chops
Roasted Baby Yukon Gold Potatoes
Garden Salad
Rolls or bread

  1. I have been really working on cooking more lately, and plan to use more of your recipes. I am reading a super fun, inspiring book called "Kitchen Counter Cooking School" by Kathleen Flynn. It is about a woman (her first book is about her going to Le Cordon Bleu) who teaches regular women about cooking basics. I thought I knew how to cook, but over the past few months am learning how little I actually know. You probably know everything she talks about in the book, but you should check it out!

    1. Thanks Tanaya! I'll add that book to my list :)! I'm so glad you're enjoying my blog. I find it very rewarding to hear that someone is being inspired by the recipes I'm sharing. Give that little one a squeeze from his "cousin" and wish him a happy Birthday too!
