I'm running a little late this week, due to getting a little flu bug.  I haven't really wanted to think about food, so meal planning got pushed aside a little longer.

Monday:

Meal Plan Monday

We just got home from a wonderful long weekend hiking in the beautiful Red Rock of eastern Utah.  We had an incredible time and unfortunately it is time to get back to the grind...  On our little vacation we got a little taste of what spring weather should be like, it was really perfect.  So now I am more than ready to dive right in to spring foods and my menu shows it.

Meal Plan Monday

We're having a short week this week.  We're off on a family vacation to celebrate my birthday.  I'm so excited!  It's been a while since we've done a vacation, so this one is well needed.  Until then though, we're going to be eating from pantry and fridge/freezer.  No worries though, we'll still share some wonderful recipes that you will love!

Meal Plan Monday

The end of last week I lost my motivation.  It was hard to get excited about being in the kitchen.  When the Hubs works his 4 day shifts that is usually what happens.  I'm glad my kids love my cooking (most of the time), but it is always so much more satisfying to make a delicious meal for the Hubs who is always full of compliments.  Compliments make me happy, but who can honestly disagree with that.  This week however, the Hubs will be home more, and we have a big day to celebrate...  Thursday is our anniversary!  We've been married for 10 years, together for 11, and best friends for 13.  Every day I still wonder how I got so lucky to have a wonderful, hardworking, man in my life.  So, Friday night rather than celebrating out, we are sending the kids to spend the night with their wonderful Auntie, and we're cooking some of our favorites together! 


Monday:
Carne Asada Tacos on fresh tortillas
Spicy Black Beans

Peanut Tamarind Sweet Potato Curry (a family favorite)

We are getting back into routine this week.  Back to school after a nice quiet Spring Break, and I couldn't be more thrilled.  I really missed having that one on one time with my youngest while my older daughter is at school.

The menu this week is a bit of a mish-mosh, a true variety of things, delicious none the less.

With the holiday weekend come and gone, we have found ourselves coming down from a sugar high.  Back on the boat of healthy eating.  We are also on spring break this week, so I will be making more "kid friendly" meals and employing the help from my 5 year old.

Meal Plan Monday

I am so excited about this weeks menu.  I kind of got a bit burned out by Saturday of last week, but strangely enough, spending the whole day in the kitchen making a fun Saint Patrick's meal for my family recharged my battery and I'm ready to go again.

Meal Plan Monday

I'm a little late getting my meal plan for the week posted.  I don't know about you, but Daylight Savings time really messes up my little family.  The kids take a few days to adjust and last night was rough...  I guess the hour and a half nap on the way home from visiting Grandma and Papa for the weekend didn't help matters either.  But needless to say,  we were all in bed and asleep by midnight :(  I could have done with another hour or so, but maybe tonight will be better...

I'm excited for this week's plan.  I am feeling the need to cook on the grill, to keep things fresh and I'm seeing my menus transforming from Winter foods to Spring/Summer foods.  I LOVE to see that change.  It makes it even more real that Spring is really on the way after a long, long Utah Winter.

I am excited for this weeks menu... Friday and Saturday gave me a taste of spring, and now I am in the mood for "lighter fare".  Spring is the beginning of big salads, berries, and lots of grilling.  Nothing better in my opinion!

Meal Plan Monday

We are finally getting back into the swing of things... I think we've had enough sickness to last until next January.  We decided to forge on and stick to our menu plan and I really believe having healthy meals helped out a lot!  My little sous chef isn't complaining either, she loves the extra time in the kitchen helping me out.

This week we've got some great meals planned.  I get so excited about food, trying new recipes, and even going back to family favorites.  This week we've got a lot of great produce in the refrigerator, so meal planning is even easier :).

Monday:
Pioneer Woman's Chicken Spaghetti
Wedge Salad
Rolls  (Sunday's recipe made a LOT)

Tuesday:
Pulled Pork Sliders on home made ciabatta buns
Cole slaw

Leftover Night!
The hubs and I are going to meet Bobby Deen!  I CAN'T WAIT!!!  Paula Deen and her boys have provided so much cooking inspiration to me and I've joked for years that my older sister needs to marry Bobby, so maybe this is just getting my foot in the door to make other things happen ;).  I would love to have Thanksgiving with Paula :).

Meal Plan Monday

Well, we are going to try this again...  We'll just call last week a wash.  Between a sick toddler, a trip to ER to treat dehydration and rule out pneumonia, and helping in my other daughter's kindergarten class for two days last week, not much else got accomplished.  This week, although one daughter is on the mend, the other now has this awful virus, we are powering through and making this week worth it (when it comes to food anyway).

Menu Plan Monday

This week has hit one roadblock after another...  Late Sunday night my little one got sick, and it has just consistently gotten worse since.  I'm hoping that her fever will break tonight and she'll start feeling better.  I know I am ready for her to be her happy bouncy self again.  So, our menu plan this week has been a bit different and, obviously late. 

Monday - I can't believe I'm even admitting this... we ate a frozen pizza :(  It made me wonder why we ever thought they tasted good at all.  I decided then and there that I need to make a bunch of pizza crusts, par bake them and have them ready to throw together a pizza in no time at all.

Tuesday - The hubs took over :) - Breakfast for dinner.  Scrambled eggs, ham, orange slices, grapefruits, and English muffins.

Wednesday - Roast pork with Cherry balsamic glaze, cauliflower, and fruit.

Thursday - The day of love :)  We're doing two dinners, one for the kiddo's and one for us (lucky for me the Hubs has the night off :) ).  The kids are getting stovetop mac and cheese, and steamed broccoli, and frozen peas.  The Hubs and I are having Blue Cheese crusted tri-tip steaks, garlic mashed potatoes, green beans, and chocolate dessert ravioli with berry sauce and whipped cream.

Friday - Lime Chicken Tacos - A family favorite!

Saturday - Free night... I'm hoping there are leftovers for this night.

Sunday - If both kids are well again, we're having dinner with friends.  I'll be making french bread/breadsticks and something for dessert...

I do claim the right to change this weeks menu in any way I see fit ;)  When I have sick kids it turns out to be a "fly by the seat of your pants" type of situation...

Meal Plan Monday... err, Tuesday ;)

This week we got off to a bit of a slow start.  Between our youngest child turning 3 and the Super Bowl, we were tired come Monday morning.

This week menu (doing just dinner from here on out - breakfast and lunch change so much at our house that we'll just skip it)

Monday - Porcupine Meatballs, broccoli, and whole wheat bread

Tuesday - Baked potato bar (baked potatoes topped with every veggie we've got, a little cheese, and some sour cream.  YUM!)

Wednesday - Chicken Piccata  (I've been craving this one lately, and I can't wait to make it!), garlic herb angel hair, and ceasar salad with fresh ceasar dressing.

Thursday - Carne Asada ( just got my sis-in-laws recipe and it sounds delicious), refried beans and big green salad.  (switched this one to Wednesday and will be making Chicken Picatta tonight.)

Friday - BBQ Chicken calzones, veggies and dip.

Saturday is our leftover day for the week.

Sunday - Edited* Today is Chinese New Year!  So we feel we should participate.  Besides, who doesn't love Chinese food, right!?!  Our new menu for the day is...  Beef and broccoli, stir fried veggies and noodles, home made fortune cookies.

Meal Plan Monday Jan 28-Feb 3

Ever since having kids I've planned out our menu's.  My only problem is sticking to them.  Something would happen, or my mood would cause my tastes to change that day and we'd veer from the plan and get creative.  Creativity is wonderful, don't get me wrong.  But in this case, I need to learn to be more consistent,  stick to my plan and teach my children how to plan and follow it.  So, meal planning is once again in full force.

A little background... my hubby works a wonky schedule and is only home for dinner about half the time.  I always find that on those nights it is hard for me to get motivated to make "nice" meals for my family.  It is always so much easier to just scramble some eggs and make toast, or pull out the box cereal.  My kids would love that too, but they are becoming more picky with their food likes and dislikes, so it is time to get a little more strict, and get my great adventurous eaters back.  I am easing into it, by using some very kid friendly meals on days when the hubs isn't joining us, but also things that are great re-heated as hubs loves leftovers.  So on to the meal plan...

Saturday is our "free" day to use up leftovers that didn't get used during the week, but this week is special, our littlest is turning 3 and we're celebrating!  The menu is all her choice.
